A much-discussed topic . . . Perth is certainly unique and in the top 5 or 10.  Others: Altamont, both versions from Philadelphia 72,  Brussels, and Paradiso 95.  The latter is certainly Ronnie's best contribution ever.  Some love the 75 versions.  I say "meh."

1.Studio version
2.1972, Philly Special
3.1975, Toronto
4.Stripped Companion
5.Any 72/73 boot

Anyone wonder how this woulda sounded in 78-81?  I'm kind of glad they didn't play (butcher) it then.

Tokyo 26th February 1990, with Mick losing himself in his performance towards the end. Brilliant version. Honourable mention - Paradiso '95.

In fairness, its a song they usually play well, although the decision to 'sample' the intro on the Licks stadium shows for the part when they were walking back from the b-stage was bordering on sacrilegeous.

That Perth version is phenomenal. I've extolled the virtues of this version before on this forum, but what the hell. The way the band can't seem to quite find the groove at the beginning - it seems like only Mick, Keith, and Nicky know what they're doing - only to build up to the second verse and ERUPT the way they do... it's just incredible. And yes, MT's wah effects are just great!

It's hard to pick a fave Gimme Shelter - most of the ones in my top five have been mentioned here already (Paradiso '95, Philly '72, Brussels '73, etc.) I do love some of the early '69 versions, despite the tentativeness of some of them... which is actually kind of appealing.

I heartell there's a sole version from 1970 (the opening gig of the tour?), wherein the chords in the chorus are played a bit differently, which makes for a unique listen. Anyone have this? I've been looking for it for a long time!

That was downright ridiculous. I remember hearing that for the first time and thinking, "Who in the hell is playing that?" Still gets a bug up my ass every time I think about it!

I should have quantified this by saying "best LIVE version".

NOTHING tops the original, which 40 years later remains the greatest thing the Stones have ever released and probably one of the top 5 or 10 songs ever released by anyone.

Another cool version worth mentioning is the one they did for the BBC special 'Pop Go The Sixties' taped in mid-December 1969 and which was broadcast on the final night of the decade. Its only a live vocal over a pre-recorded backing track, but Mick's vocal performance is fantastic.
